NCT's Iron Chef 30: Battle Fish

For Iron Chef 30, the secret ingredient is……..

Fish!

As with the other ICs, this is a challenge to ourselves. There is no judging, and no winner. We are ALL winners in this since we will all benefit from the creativity and new recipes that this challenge will bring us.

The rules are simple, make any kind of dish you want, however you want. Drink, Appetizer, Main Course, Dessert, etc. The only stipulation is that you must use Fish in some way in the dish.

Once your dish is ready, it’s a good idea to make a new post with your recipe. Then, post a link and a picture of your recipe to this thread. Alternatively, if you like, post your recipe and pictures here. In the end, we will compile all the results into one thread for easy searching.

Now, let Battle Fish begin!

My family are not great on fsh, but I will try and get one in there - possibly a fish pie.

Oh fish pie! that sounds great.
I've got some salmon fillets that will be prepared with a spice rub.
Don't know if I'll do them today or tomorrow, because I've already got the ingredients ready for today's dinner.

Panko crusted deep fried walleye and perch, served with homemade Italian bread, boiled redskins tossed in seasoned & buttered bread crumbs and coleslaw.

Did you know I bought new plates and a camera just so I could cook my dinners and post them looking somewhat better, so I'd finally feel a part of this forum?
Still have to work on the focus and size tho.:yum:

Super simple catfish fillet oven baked pouch meal!
Catfish on a bed of parboiled noodles, with some veggies on top.
Seasoned with a bit of Nuoc cham vietnamese dipping sauce!

I think this is the 4th or 5th challenge that is an item I did the week previously! I love the looks of these meals. Take a trip back in time and imagine I did my bronzini and scallops last night!

Your pictures are great! It is fun getting a new camera :bounce:.

Very nice, Kimchee. I buy big bags of catfish filets at Sam's and am always looking for new ways to cook them.

This is a longtime favorite in our house. The salmon is exceptionally moist, and the pepper, which complements the salmon very nicely, becomes very mild with cooking. It's easy to make, too. Great with a big Pinot Noir! Downloadable and printable PDF version of the recipe is attached.

SALMON IN PEPPER CRUST

2 Tablespoons Soy Sauce
1 Large Garlic Clove (Mashed to a Paste)
2 Teaspoons Fresh Lemon Juice
1 Teaspoon Sugar
2 Salmon Fillets, Skinned (6 ounces each)
4 Teaspoons Coarsely Ground Black Pepper
2 Tablespoons Olive Oil

1. In a sealable plastic bag combine soy sauce, garlic, lemon juice,
and sugar; mix well.

2. Add salmon, shake to coat well, squeeze all the air out of bag and
seal it; let salmon marinate in refrigerator for 30 minutes, turning
bag over once or twice.

3. Remove salmon from the bag and pat it dry; discard marinade.

4. Press 2 teaspoons of the black pepper onto each piece of salmon,
coating it thoroughly on all four sides.

5. Heat the olive oil in a heavy skillet over moderately high heat until
it is hot but not smoking.

6. Saute the salmon for 2 minutes on each side (8 minutes total for
each piece), or until it just flakes.

7. Transfer the salmon with to paper towels and let it drain for 30
seconds.

8. Serve with lemon or lime wedges.

Serves 2.

FB, nice! I used brown sugar in my rub and it really brought out all the flavours along with the other herbs and spices.

I just saw my supermarket has them in those net bags. I've only seen them mixed with red & yellow before. Now I can get a whole bag. I think one bag which is about 3 small serving is $4.99.

I'd have to shop in a larger city to find them Cheese-- now they are on my "find" list!
