Onion Garlic Bread

For the past few years, my father has spoken of what he called "Onion Bread" that his mother, my grandmother, used to make.

He described it to me, so I made it this week while he was visiting. He said it was pretty much the way he remembered it. I figured it's just garlic bread with fresh onion slices in it.

Anyway, it was delicious! We used some of it to sop up our fresh tomato salad.

Onion Garlic Bread

Loaf of Italian bread
1 yellow onion, very thinly sliced (I used a mandolin)
1 stick of butter
garlic powder
salt
chopped fresh parsley (or dried)

Preheat oven to 350.

Cut slices into bread, but not all the way through. Place bread on a piece of aluminum foil and onto a cookie sheet.

Melt butter and add seasonings to taste. Brush all sides of slices with seasoned butter. Stuff sliced onions into each slit. Brush any leftover butter on top of the bread.

Bake for 15-20 minutes, until onions are a little soft and bread has a nice golden crust.
