Steak Enchiladas for Sass

of course i havent tried this one but i found it while looking for a shredded beef enchiladas recipe

Ingredients

2 packages (8 oz. each) Morningstar Farms® Meal Starters™ Veggie Steak Strips
2 cans (7 oz. each) chopped green chilies, drained
2 medium onion, sliced
2 medium red bell peppers, thinly sliced
2 cups chopped yellow squash
2 tablespoons paprika
2 tablespoons chili powder
1 1/2 cups Monterey Jack cheese, shredded, divided
10 (8-inch) flour tortillas
1 can (10 oz.) enchilada sauce
