Crunchy Meat Loaves

2 eggs
1/4 c packaged bread crumbs (or make your own)
1 (8 oz) can water chestnuts, drained and finely chopped
1 tsp salt
1/8 tsp pepper
1/4 tsp garlic powder
1 lb lean ground pork
1/2 lb ground beef
1 c chicken broth
1 tbsp cornstarch
1 tbsp brown sugar
2 tbsp soy sauce
2 tbsp chopped green onion
1 (11 oz) can mandarin oranges, drained
1 tbsp toasted sesame seeds (optional)

Beat eggs until frothy. Add bread crumbs and beat well. add water chestnuts, salt, pepper, garlic powder, and ground meats. Mix well. Form into 6 oval-shaped loaves. Place in 13xx9x2 pan and bake at 375F for 20 to 25 minutes

While loaves bake, make sauce. Stir chicken broth into cornstarch in small saucepan. Add brown sugar, soy sauce and green onion. Cook, stirring constantly, until slightly thickened. Add mandarin oranges.

Remove partially cooked meat loaves from oven and spoon sauce over them. Return to oven and continue baking another 10 to 15 minutes.

At serving time arrange loaves on deep platter and sprinkle with sesame seeds if desired. Serves 6
