Old Smokie Sandwich

This is one from the half-way house on the golf course I work at. It' ridiculously easy to make. The "Oklahoma Crude" is just ketchup, brown sugar, and cayenne pepper, all to taste. I don't remember what the ratios are. The Tennessee Bacon is thick-cut bacon, laid out on a sheet pan, and sprinkled with brown sugar and fresh-cracked black pepper, then baked.

Old Smokie Sandwich
Yields: 1 sandwich

2 slices of wheat bread
2 slices of Swiss cheese
“Oklahoma Crude” BBQ sauce, or other spicy BBQ sauce
2 slices Tennessee Bacon (see recipe)
4 oz sliced ham

Place the ham and bacon on a griddle. Place the bread on the griddle, then cover with the cheese, and spread some BBQ sauce over the cheese. Flip the ham when the first side starts to caramelize. When the bread is toasted, and the cheese begins to melt, remove the bread to a cutting board. Lay the ham on one piece of bread, then the bacon, and finally top with the second piece of bread. Cut, corner to corner, and serve.
