-hearty bread (2 slices per sandwich)
-chix tenderloins (2 per sandwich)
-portobello mushroom(s) (1/2 per sandwich)
-hummus of your preference
-alfalfa sprouts
-chix or veggie stock or broth (may substitute h2o)
-salt, pepper, sage, granulated onion, granulated garlic

place tenderloins in shallow pan; combine stock & seasonings & pour enough over chix to partially submerge. place on low & poach, covered, for about 5 minutes & not more than 7. meanwhile, poach mushroom(s) in the same manner.
spread a generous layer of hummus onto each slice bread. gently press sprouts onto 1 slice for each sandwich.
when tenderloins/mushroom have cooked through, remove & drain. slice mushroom & place onto bread; arrange chicken over mushroom slices & grind pepper over. pile more sprouts over the chix; cover w/ other slice of bread, slice into halves if desired~
