Frozen Oreo-Creme de Menthe Pie

I posted a pic if this in the daily thread, but the pie is so simple that I thought it should have a place here in desserts. This is a great summer dessert. It is cold, minty, and light. It even has chocolate!

There's a story here - when I was in my 20's, and about to get married, I wanted to lose 20 pounds before the wedding. So I joined Weight Watchers. I was chatting and sharing recipes with another member before a meeting, and she gave me this recipe.:ohmy: I think they would have taken away our membership if they knew about this one!!!!!:lol:

I did have trouble losing weight with this program.:pat:

Frozen Oreo-Creme de Menthe Pie


24 Oreos
1/2 stick butter

Crumble cookies into the food processor, add the butter, and pulse into fine crumbs. Press into pie plate, but reserve 1/4 cup for decorating the top later.

1/4 cup green Creme de Menthe
1 small jar of marshmallow fluff (7 oz)
2 cups heavy whipping cream

Use a whisk to dissolve the Creme de Menthe and the Fluff together.
Whip the cream to stiff, glossy peaks.
Fold the 2 mixtures together. Pile into pie shell. Decorate the top with reserved crumbs.

Freeze for several hours or overnight.

The recipe rings a bell - I seem to remember that it was a very popular one when it first hit the scene (I don't remember the decade), but I don't think I ever made it.

Looks like a good one to try this summer!
