Easy Harvard Beets

This is another recipe that I got from my mother. She was a member of a church group that she called Circle. They did lots of things, but they always made time for recipe swapping. I never went to any of the meetings with her, but I can just imagine her and all her little lady friends sitting in a circle and sharing recipes. Makes me smile!

The recipe card says, Georgie's Harvard Beets, so the recipe source is Georgie :respect:.

1 16 oz can beets (I've always either used whole and sliced them or just bought sliced.)
1/2 c sugar
1 1/2 t corn starch
1/4 c white vinegar
1/4 c water
2 T oleo (I always used butter.)

Mix the sugar, corn starch, vinegar, and water. Add the beets and the juice from the can. Bring to a boil and boil for 5 minutes. Add the oleo/butter.

I always made them ahead and put them in the refrigerator overnight. I've since gotten lazy and have been buying Aunt Nellie's beets. I'm going to have to do some of these again.
