Shrimpy Sweet Corn Curry Soup

1 medium onion-chopped
1 T butter
3 T flour
2 t curry powder
3-1/2 c chicken broth
2 T lime juice
1/4 c honey
1 c fresh sweet corn
1 c milk
1/2 lb shrimp

In large pan heat butter until it bubbles, add onion and sautee til tender, about 4 minutes.
Stir in the flour and curry spice and cook an additional minute.
Slowly stir in broth, lime and honey and bring to a boil.
Reduce to simmer.
Stir in corn, milk and shrimp and simmer 3 minutes longer.
Season with salt and pepper.

Thanks for the recipe. I bought a jar of Pennzeys curry seasoning and don't think I've really used it in anything yet.

Sounds divine! Can crab be substituted for the shrimp?
