I used whole wheat tortillas and 2% Greek yogurt instead of sour cream. I made pico de gallo the other day, which added crunch and zing.
Couldn't taste much of the fajita seasoning, so next time, I'll save some to sprinkle on after I drain the stuff. So much liquid that I had to drain the chicken and vegs. in a colander.

Crockpot Chicken Fajitas
1 pound chicken breast cut in strips, or chicken tenders
2 colorful peppers, sliced
1 onion, sliced
2 plum tomatoes, diced
1 packet Fajita seasoning
tortillas
Topping suggestions:
Pico de gallo
Shredded Mexican cheese or pepperjack cheese
Cilantro
Sour cream or plain Greek yogurt
Toss the chicken, vegs and seasoning together in a crockpot. Cook on LOW for 4-5 hours (I went 4 and1/2). Drain in a colander.
Heat tortillas in microwave for 20 seconds. Spread sour cream or yogurt on, then chicken and vegs, then toppings. Roll up and enjoy!
