Toasted Tomato Sandwich

After a relatively cool summer, I am now (middle of October!) getting some of my best red tomatoes!

One of my favorite ways of eating them is to thinly coat two slices of country white bread with Hellman's mayo. Put slices of homegrown tomatoes on the bread, sprinkle with Fleur de Sel, cover the tomatoes with the other slice of bread, and toast the sandwich in the toaster oven.

Oh my gosh, ambrosia! The combination of flavors and textures is wonderful!

Kind of messy to eat, so I cut the sandwich in quarters. Still get juices down my hand - finger lickin' good!

The variety of tomato here was "Mortgage Lifter". Wonderful flavor, but I only got a few tomatoes on the plant.

I love tomato sammies on toasted whole wheat then mayo on both slices, salt and pepper. Sometimes a rubbed pinch of oregano and a leaf or 2 of fresh basil.

Nothing like a big juicy tomato sandwich !

...sometimes with a thin slice of Bermuda or Vidalia onion...........
