Oriental Scallops (Microwave)

Oriental Scallops (Microwave)

1/4 c. Un-Seasoned bread crumbs
1/4 c. Salted peanuts, finely chopped
1/4 tsp. Red Pepper flakes
1/4 tsp. garlic powder
1/4 tsp. ground ginger
1 TBL extra-virgin olive oil
1 1/2 lb. sea scallops (the Big'uns)

In a small bowl, mix together first 5 ingredients. Set aside.
Lightly spray a 9-inch glass pie dish with cooling spray. Arrange scallops in the dish and brush with the olive oil. Top each scallop with a generous dollop of the peanut mixture.
Loosely cover the pie dish with plastic wrap and vent slightly on one side.
Microwave on HIGH 5 minutes. Let stand, covered, for 5 minutes.
Served surrounded by steamed green beans and sweet red pepper slices.

If they were naked, or if the cooking time were much longer, yes.
Try this; I have a 1200 watt oven, and they come out fine !
