Huevos rancheros with Mayan cacao nib spice mix. Black beans at 12 o'clock, then clockwise poached egg, avocado, chorizo. Queso fresco in the middle. Cilantro and the spice mix on top. Craig had pickled jalapenos as well. It was spicy enough for me as is. Bottom was homemade corn tortillas and a red sauce.

around here meatloaf is a bit like stew - lots of things 'show up' in the meatloaf.
for super low fat ground beef I add applesauce to keep it moist.
grated carrot, sweet/banana peppers, etc.

used to do hard boiled embedded eggs which made the kids giggle.


I think I've finally discovered what DW liked about my mother's meatloaf - a "top crust" - crank up the heat last 10-15 minutes . . .

I think I've finally discovered what DW liked about my mother's meatloaf - a "top crust" - crank up the heat last 10-15 minutes . . .

We also love a crust/bark on our meatloaf. I use convection roast to cook my meatloaves. Seems to get a better crust than regular bake.
I never use a loaf pan except to mold them sometimes for more uniform shape. Then remove from pan to bake.

I sometimes mold the meatloaf around a half cooked (steamed) cauliflower.

Now I will HAVE to make meatloaf! LOL Maybe meatloaf surprise with cauliflower. I had planned to make one soon but now I am craving it.

Mine always has a crust on it too, but it's never on purpose lol
So I cover it in ketchup.

More than likely a sandwich "something" at work.
Unless I order out or take something along.

We always make a mix of ketchup and Worcestershire and spread it on the top of meatloaf for the last 15-20 minutes of cooking.

We also make Italian style ( as Tina calls it ) meat loaf with Ricotta cheese
Breadcrumbs egg, Italian seasonings; then flatten out, and spread grated mozzarella and ricotta, roll like a jelly roll, them in a greased loaf pan and bake 350F till done.
Or..... sometimes Tina will take 1/2 the meat mix, and flatten in the loaf pan, then add the cheese mix, cover with the other half on top, and bake.
That's the lazy way, I say! LOL (( It is good though. ))

DW likes a tomato smother but I especially do not - so when forced,,,, I pour (canned) tomato sauce on _half_ the loaf...

Steaks are in fridge to grill, fry, or boil......whatever.
Son Jimmy grilled them. Tina made baked potatoes.

I made pork fried rice with a bunch of leftovers in the fridge. With a salad.

I bought the ingredients for stuffed breast of veal and stuffed cabbage. Not sure which will be tonight's dinner. OR if DD wants something else. :whistle::bounce:

clueless what to have for supper......
I could go for spaghetti with Tuna / breadcrumbs and minced garlic.
........................................... OR ..........................................................
Shells with fried onions and kidney beans.

Last night, we had rib eye steaks. They were so tough. Like chewing on leather. They must have been "select' product.
The two left not cooked, I will grind for chopped meat. I'm surprised ShopRite market let us down on those steaks.

It's proving to be another busy day.
I'm considering beef bulgogi and sushi from Ninja.


We're having rib eye bulgogi that has been marinating since early a.m., sliced the meat last night and was going to make marinade after dinner, but that didn't happen. Rice and 5 banchan will go with, 1 is made, 1 is made, but has to be cooked, and I'll be making 1 shortly. The other 2 have to be made and/or cooked right before dinner.

I got Korean beef bulgogi.

Wauseon roll/deep fried-red snapper,avocado, cream cheese,scallions and special sauce.

Crunchy crunch/-shrimp tempura, cucumber,mayo with crab crunch topping.

The sushi rolls they prepare are named for things, places in the area (Wauseon roll, Wildcat roll/school team and Sylvania roll)

It is all fabulous!

Beef bulgogi with onions and carrots over rice, with banchan of spinach, homemade kimchi, Korean potato cakes, stuffed shiitakis and daikon/carrot slaw. Soju to drink.

All everyone's meals look so delicious.
My dad loved a stuffed veal pocket.
Tina makes them great. Peeps veal pocket looks delicious!

OK.....over here on the eastern side, I had a meal out of a bag.
2 Mac doubles with cheese, and a medium fries.
I'm full.....
