yup. oatmeal.
around here meatloaf is a bit like stew - lots of things 'show up' in the meatloaf.
for super low fat ground beef I add applesauce to keep it moist.
grated carrot, sweet/banana peppers, etc.
used to do hard boiled embedded eggs which made the kids giggle.
I think I've finally discovered what DW liked about my mother's meatloaf - a "top crust" - crank up the heat last 10-15 minutes . . .
