Sausage and Hash Brown Casserole

I had some frozen hash brown patties in my freeze and wanted to get rid of them.

This was excellent! Served it for dinner with roasted zucchini and summer squash spears. And ketchup!

Sausage and Hash Brown Casserole

4 to 6 frozen hash brown patties, thawed
1 pkg. shredded cheese
1 pound bulk breakfast sausage
1 small onion, diced
3 cups milk
8 eggs
salt, pepper, Cajun seasoning to taste

Preheat oven to 350. Spray a 9 x 13 pan with Pam. Cook sausage. Place the hash browns in the pan in a single layer. Sprinkle the cheese over them. Sprinkle the cooked sausage over that, then sprinkle the onions.

Beat together eggs, milk and seasonings. Pour over everything. Sprinkle paprika (I used smoked) . Bake at 350 for 45 minutes to an hour, until a knife inserted in the center comes out clean.

Wait 5 minutes before serving.

Note: They fried up 4 slices of bacon and crumbled that in with the sausage. I didn't think I need that!

Almost like a quiche!! I'm tempted to try it as a Sunday brunch!! :piesmiley1::eating2:

I see them, & I saved them in my folder. I also copied & pasted the recipe to Word Pad & saved it in the Documents folder!

I'm going to make this maybe this coming Sunday morning for brunch!! :WitchBrewsSmiley::weber:
