Mint and Mustard crusted lamb chop

The number of chops you use is going to depend on you....I used 1 per person since I was coupling it with the shank. Generally, you have to assume 2-3 chops per person.

In addition to the above ingredients, I also used fresh chopped parsley and smoked paprika.
Coat the chop with the mustard. Finely chop the herbs with the garlic, salt and pepper, and paprika. Dip the chop into the herb blend.

Grill no more than 2 minutes per side for rare.
