Did another pan-seared flat iron, only this time I used ghee, as suggested by the late and great joec.

Terrific sear!

(sorry that the picture of the lobster on my platter is distracting!)

That's beautiful lee. I am craving beef steak. Pot roast or ground beef just won't cut it. There is nothing like a nice medium rare steak. I haven't had a steak in so long.
