Cucumber Salad with Tahini Dressing

I've made this before, since I like recipes that use the fresh herbs I grow. And I love tahini.

Cucumber Salad with Tahini Dressing
Ingredients


  • 3 medium cucumbers (I used 6 mini-cukes, unpeeled)
  • 3 tbsp tahini paste (or more!)
  • 1 tbsp lemon juice
  • 2 tbsp warm water
  • 1 clove garlic, minced
  • zest of 1 lemon
  • ⅓ cup chopped red onion
  • 1 tbsp chopped fresh mint
  • 1 tbsp chopped fresh basil (or 2 teaspoons dried basil)
  • 2 tbsp chopped fresh parsley
  • salt to taste
  • pepper to taste
Steps


  1. Peel and cut cucumbers into bite-size pieces.
  2. In a large bowl, combine tahini, lemon juice and water. Add extra water a little at a time until you reach desired consistency of dressing.
  3. Stir in garlic, lemon zest and onion. Add cucumbers and toss to combine.
  4. Add mint, basil and parsley and stir gently. Season with salt and pepper to taste. Serve chilled.

I may use dill and parsley and basil only though.
