Olive and Rosemary Sourdough Bread

this is enough to make 2 loaves.

2 cups sourdough starter
2 cups water
6 cups flour (more or less depending on moisture of dough)
4 tablespoons olive oil
2 tsp active dry yeast
2 tsp sugar
2 large sprigs of rosemary(chopped finely)
1 cup olives (i used an olive spread and chopped Kalamata olives)
corn meal

add water,oil,sugar and yeast, let proof for ten minutes. Add starter and the rest of the ingredients..mix well. I dont use a mixer so i kneeded for a few minutes then let it rest for 10 minutes, then came back and kneeded some more.

cover with cling wrap and let raise until tripled in size. approx 3 hours.

after three hours punch down. i formed into rustic looking loaves, sprinkled corn meal on my pizza peel and let it raise for an hour.

preheat oven 475 - i used a pizza stone to cook mine on.

you can also cook it in a enameled dutch oven.

I used to have some until my black lab stole it and ate it. Bam might be able to share or JoeV most likely has some he might share.

you can PM me your addy and i can send you some starter..will have to figure out how to send it though.

i have two strains going right now, both from the same original strain but both having two different tastes. they all started out from a 200 year old San Fransisco starter

Thank you Bam. King Arthur just puts it in a plastic cup and seals the cup in a plastic bag. Then they just UPS it and say you have to feed it right away.

sourdough starter is pretty forgiving....i forget about mine sometimes

you are welcome to some as well.

How much do they usually ship in the cup?

At my peak, I had a thriving rye sour culture and sourdough starter in the fridge.

Peeps, I have a great Rye Bread recipe. All that tried it loved it. It is not sourdugh though. Let me know if you are interested.
