Cheese and Shrimp Quiche

5 slices bacon
1 cup sliced mushrooms
2 t. finely chopped onion
1 unbaked 9" deep dish pie shell
1 cup shredded Swiss cheese
1 can small shrimp, drained (I just chop up fresh shrimp)
4 eggs, lightly beaten
1 can cream of mushroom soup
2 T. sherry
1/4 t. grated nutmeg
1/4 t. pepper

Preheat oven to 350. Cook bacon in skillet over medium high heat until
crisp. Remove from skillet using slotted spoon. Drain on paper towels and
set aside. Discard all but 2 T. fat. Add mushrooms and onion to skillet and
sauté until tender, about 4 minutes. Crumble bacon into pie shell. Sprinkle
mushrooms, onion, cheese and shrimp evenly over bacon. Mix eggs, soup,
nutmeg and pepper in medium bowl and beat well. Pour into pie shell. Bake
until toothpick inserted in center comes out clean, about 35 to 40 minutes.

Serve with a salad and you're good to go!
