Burger - Eggplant Casserole

1 lb. ground Beef
2 TBL Cooking oil
1 medium Eggplant
Flour and egg wash for dredging
1/4 c. Olive oil
2 c. Tomato Sauce
1 tsp. dried Oregano
1 tsp. onion powder
2 TBL grated Parmesan cheese
1 c. grated Cheddar cheese
1 tsp. Salt, or to taste
Fresh-ground black Pepper ( to taste)

Shape ground beef into 4 to 5 patties. Season to taste with salt, pepper, and onion powder. Brown in the cooking oil.

Slice eggplant (w/ skin on) into thick slices. Season with salt & pepper. Dredge in egg wash and flour and brown in Olive Oil.
Arrange browned eggplant slices in a shallow baking dish. Top each slice of eggplant with a cooked beef patty. Cover with tomato sauce.
Sprinkle with Oregano, and parmesan cheese. Top with grated Cheddar.
Bake @ 300 degrees for 35 minutes
