BARLEY CASSEROLE

1/3 c. barley, soak in bowl of water for 3 hours
1 lb. ground beef, browned
black pepper
1 med. onion, small dice
1 c. sliced carrots
2 tbsp. molasses
2 tbsp. soy sauce

In a 2-quart casserole, mix drained barley, browned beef and onion, 1 cup carrots and molasses, mix well. Add enough water to cover.
Cover and bake at 350 degrees 1 hour
When serving, offer Soy sauce. (About a tsp. on each serving is right)
You may have to add more water during baking.

I love barley, but want to make sure it is fully cooked and tender after baking for an hour.

This sounds great! I might add a few mushrooms, either fresh or re-hydrated dry mushrooms.

as long as you soak the barley you should be fine.

I've never made it, but my Mom made it often. (I'm not a big fan of Barley)
