Does marinating hinder browning of steaks?

I used to marinate beef and chops a lot, but was never happy with the way they browned on the grill.

So I stopped, and grill my stuff dry, with just some seasoning sprinkled on.

But I see so many delicious marinades on this forum, and would like to try some.

I don't want to give up great grill marks and the Maillard reaction I get when I pan-sear a dry steak.

Can I marinate AND get good browning?

Marinating does, indeed, hinder browning. So does brining. If you want to marinate, make sure you pat the meat real dry before trying to sear it - that will help some.

You'll have better results with a dry rub instead of a wet marinate.
