Express Chili

2 #s Ground beef or Meatloaf mix
3 cans pinto beans (rinse well)
3 jars good salsa (get the best salsa available)
2 envelopes chili seasoning mix
2-3 cups beef stock

Brown the ground beef and drain.
Add everything else simmer on low for 1 hour

Serve with tortilla chips or garlic bread

Note. Everything you would put in a chili is already in the salsa making this a quick and less expensive alternative. This recipe is basic but can be altered very quickly. Garlic, shrooms, green chili peppers & pepper sause are some of the options I like to add.

No wonder it's called Express. I never saw a recipe that called for using salsa..... and I just happen to have a jar. I was going to make a dip out of it, but I didn't. Maybe I'll make a small version of this chili and use it up. Thanks.

Great quicky recipe for a cold day, Lefty. I'm saving it for when I'm cold and lazy, and it sounds really good.

It is such a quick recipe and can be customized so easily. I found shrooms are like little sponges in chili and absorb all of the flavor while giving a little texture.
