Stuffed Aubergine

I've put this here as it is a mixture of vegetable & meat.

Halve your aubergines and brush with olive oil. Put in hot oven to bake.
I made the stuffing by frying a red onion, white onion, celery, 1/2 red pepper and garlic together. Added some paprika, cumin, salt & papper.
Add minced beef to the mixture & brown.
Add 2 tins of tomatoes & half a carton of natural yoghurt, and leave to simmer & reduce till thick.

When aubergines are sof remove from oven, scoop out the flesh and add to the stuffing mix leaving the skins behind

Fill the skins with the stuffing mix and cover with grated cheese.

Bake in the oven till piping hot & cheese has melted.

Serve with whatever sides you want. One would have been enough for me.

:clap:Looks great with all that melted cheese! I've had something similar, but I really like the idea of putting the stuffing back in the shell.

Yogurt, huh? That sounds interesting. I might have to pick some up and add some to one of my burger concoctions.

Interesting idea of roasting the halves of eggplant, THEN scooping out the flesh and adding it to the mixture!

I always scoop out the flesh raw, cube it, and sautee it along with the other stuff in the mixture, then fill the raw "boats" and cook in the oven till cheese melts.

Don't your "boats" collapse, Ray?

They are quite soft, but only one split and they stood up well again once the stuffing was packed in.
