Deconstructed Stuffed Peppers

Ingredients
2 c prepared rice
1 lb ground beef, lean
2 green bell peppers; sliced
1 small sweet onion; sliced
2 clove garlic; minced
1/2 tsp salt
1/4 tsp pepper, black
1 tsp Italian seasoning
2 1/4 c marinara
1 c shredded mozzarella cheese
1/2 c breadcrumbs
1 Tbsp olive oil

Directions
1. Preheat oven to 350.
2. Place ground beef in a large, oven-safe skillet, over medium-high heat.
Cook until browned. Drain excess grease if needed (if beef is lean you can
probably skip that step).
3. Add onion, peppers and garlic to ground beef and cook until onion is just
beginning to soften. Season with salt, pepper, and Italian seasoning.
4. Stir in rice, marinara and half the cheese. Remove from heat. Sprinkle
remaining cheese over the top.
5. In a small bowl, toss the breadcrumbs with the olive oil and then
sprinkle the mixture over the top of the beef mixture.
6. Bake in oven for 10 minutes.
7. If desired, place under broiler for 2-3 minutes to get cheese all ooey
gooey and browned.
