Already had dinner.
It was mashed potatoes over split Hawaiian rolls, the ham slices and then ham gravy.
Very good. :biggrin:

Italian small plates. Arrancini with fresh moz and prosciutto with a marinara dipping sauce. Marinated roasted red and green peppers with onion slices and garlic. Burrata with heirloom tomato salad.

And then something else since I can't.keep.my.hands.off.the.ham!
Just a sandwich on potato bread with Swiss and mayo.. and of course the fruit salad.

Leftover Chicken Roast, pulled and immersed in gravy, served over
Stove Top, along side of Kinky Cauliflower, a chunk of Cranberry Sauce...
and of course, a salad !

Although it may look different than the popular white cauliflower, the taste is just the same: mild, sweet and nutty. The orange and purple cauliflower are higher in antioxidants than regular white cauliflower."

I also took ground beef out of freezer. Thinking meatloaf, mashed, gravy and steamed spinach.

Meatball and penne bake in 3 cheese sauce (white cheddar, parm and romano) with Italian herbs.
It was gooooood!

Chicken biryani with roti. It was good, but not sure it was worth the huge list of marinade ingredients and the time it took to put it together.

Glazed ham with a raspberry, mustard, brown sugar glaze. Sides are carrots and peas, and a cheesy grit casserole.

My 16 Beans are soaking now !
I'm thinking I'll utilize Chorizo in the Soup...

here's our chicken soup approach:
this is the slow roasted chicken from just prior

I removed the big chunks of the breast / legs / wings; diced down - had chicken salad sandwiches and reserved about 2 cups to add to the carcass pickings.
simmered 3 hours, cooled/fridged over-night; defatted, strained the fines out of the broth (clarity issue).

some additional chicken stock needed; tossed the old tired carrots, fresh carrots & celery, kept the old onions - I've found adding fresh onion to be overpowering in taste... salt&pepper to taste. washed down with cornbread.
