In the U.S., the production &/or import of raw-milk cheeses is only prohibited for soft/fresh types. Raw milk cheeses that have been aged for a minimum of 60 days are allowed.

I don't know if they are still in business, but 13 years ago, when I was in college, there was a dairy not to far from where I'm currently living that was the only "licensed" dairy in the State that could sell non-pasturized dairy products. They had a non-pasturized white cheddar that was impressive!
