Chicken Feta Casserole

1-2 cloves garlic minced/crushed
1 tablespoon olive oil
sprinkle of dried chili flakes
4-6 chicken breasts - (depends on the size of the breasts and your casserole dish)
2 cups of fresh spinach
2 cups tomato sauce or diced tomatos
1 tablespoon Italian seasoning
1/2 cup feta cheese, crumbled
1 cup mozzarella cheese, grated
2 cups (to taste) garlic croutons

Homemade croutons:
take 4-5 slices of your favorite bread, cut into cubes, place on a cookie sheet. Spray olive oil on to give a light coating. One garlic clove minced/pressed. mix into the bread. Put into a 350 degree oven until crispy and light brown. About 10 minutes.

In a 13"x9" casserole dish spread oil, garlic and chili flakes. Place chicken breasts on top. Place spinach (fresh basil would be good too, just cut the Italian seasoning amount down) on top of chicken. Pour tomato's on top of chicken. Sprinkle Italian seasoning on top of tomato. Cover tomato with half of feta and mozzerella. Cover cheeses with croutons and add the other half of cheese on top of croutons.

Bake in a 350 degree oven for 35-45 minutes - depending upon the thickness of your chicken

FIL loves big filling dishes and this looks great!
