Tonight it's leftover - the barbacoa meat went into the freezer and will get it out for stuffed peppers this weekend. Local peppers are inexpensive right now.

It's moving right along.
Our neighbour has the roasting pan, which I discovered last minute. He's at work so I improvised with foil tenting. Lol
As you can see, when uncovering to baste, I pulled some of the gorgeous skin off.
Its browning back up.
The remaining carrots and onions are bathing in the juices.

I'll be back later with plated goodness.

Supper was Chili with beans. Corn bread which I didn't eat. Too sweet!
I had my chili on top a 1/2 cup of brown rice.

Yogurt for dessert!....

So much chicken left.
That was a big bird!
I'm thinking of making shredded creamy chicken sandwiches for our dinner, with pasta salad.

Not sure what you mean by that.
They were the raw baby carrots in a bag.
I put a handful inside the chicken along with a whole onion, then scattered more around the chicken with 2 quartered onions.
Roasted covered for an hour at 375.
Uncovered and basted twice until the juices ran clear.
Altogether it took the chicken about 2.5 hrs.

Last night, we had 2 kinds of quesadillas plus a side of guacamole.

Corn spiced with S and P and a little bit of dried oregano, lightly sauteed in a bit of EVOO, with fontina and Parm cheeses. My very favoritest as Pooh would say.

Chicken, onions, red bell peppers, and garlic spiced with S and P, cumin, coriander, with fontina and Monteray Jack cheeses .

Yes, they were, tho obviously not caramelized like the other vegs were outside of the bird's butt.

I want to try Garden and Gun's Soup Bean recipe next week and will have to plan the next day's activities accordingly.

I had a meeting last night and when home found the mrs brought pho back from hospital dining room. I ate the whole quart before bed and luckily isn't have to get up all night. The pho was excellent.

I just had another bowl of my Pinto's for Breakfast (So Good)
BEST PART) I have one of them 7 & 1 Pressure cookers. I throw in the meat, beans, onion, and green pepper, spice & water. Set the control-
and done. Easiest meal ever.

We have an Instant Pot but that's her thing to play with. I like doing it the old fashioned way. I let them soak overnight then leave them on low all day.

Tonight I'll grill the rest of the chicken thighs and oven bake some french fries.

Had pork steaks onions and potatoes that Tina braised slowly for a couple hours.
Had that with applesauce.
