I baked Cranberry Tangerine Nut bread loaves.

Recipe pretty please. I just bought a bag of flax seeds and am looking for a good tried recipe.

1 cup dried fruit such as currants or apricots 
1/2 cup all-purpose unbleached flour 
1/2 cup whole wheat flour 
1/2 cup chopped walnuts 
3 Tbs. flax seeds, ground 
1/3 cup Splenda (I used 1/3 cup turbinado sugar)
2 tablespoons sugar 
1 1/2 tsp. baking powder 
1/2 tsp. baking soda 
1/8 tsp. salt 
2 large eggs 
1/2 cup sugar-free yogurt 
2 Tbs. canola oil 
Preheat oven to 400° F. In a medium bowl, combine currants, flours, walnuts, ground flax seeds, Splenda, 
sugar, baking powder, baking soda, and salt. Set aside. In a large bowl, combine the eggs, yogurt, and oil. 
Add the dry ingredients to the wet ingredients and mix by hand until the flour is incorporated. Spoon into 
12 paper-lined muffin cups. Bake 20 to 25 minutes, until toothpick comes out clean. 
Makes 12 muffins. Each muffin contains 3 grams of dietary fiber.

I baked 2 loaves of cranberry tangerine bread and a cheesecake last night. I already posted pics of the bread I made last week so I probably won't post it again (it looks the same LOL). I will take a picture of the whole cheesecake and a cherry topping topped slice later.

Did you notice on the slice she presented in the dinner thread, it looked like someone got smashed underneath? :lol:
Looks like a little blue arm sticking out from under it.
What a way to go! haha!

I baked Mama's Peach Cobbler. The brown you see is NOT burned just LOTS of cinnamon. We love cinnamon.

Thin sandwich breads appear to be the rage these days, and my DW is among them. She committed sacrilege by bringing those damn things into our kitchen, which prompted me to immediately get creative to outshine the competition. Well, after one "learning experience," I got it right, and DW said mine are actually BETTER TASTING than the store-bought sandwich thins. I posted my formula over on the bread forum.
