Eggplant Caprese Bites (For FM)

Eggplant Caprese Bites

1 large Eggplant -- thinly sliced lengthwise
3 tablespoons Olive oil
2 tablespoons balsamic vinegar
2 cloves garlic -- minced
1 pinch oregano -- optional
salt and pepper
tomatoes -- sliced
bocconcini balls
fresh basil leaves
pine nuts
pesto sauce -- optional

Heat grill. Whisk together olive oil, balsamic vinegar, garlic, herbs, salt, and pepper. Brush both sides of the eggplant slices with the oil and vinegar mixture. Place eggplant on the hot grill. Grill until tender, turning once.

Layer with fresh basil, a tomato slice, and a small bite-size ball of fresh Bocconcini. Drizzle with olive oil, and garnish with pine nuts. Serve warm, or at room temperature.

This recipe is amazing, CC! It's kind of like a more substantial caprese. DH loves eggplant, too! I had to google bocconcini (there's a surprise, huh?), and it looks like I could sub mozzarella if I can't find bocconcini. I can't wait! Thank you so much!!!!
 
My pleasure. Wanted to mention, you can smear some pesto on the grilled eggplant slices in place of fresh basil, before layering on the tomato & mozzarella. Enjoy.

FM you must have a Trader Joes near you right?? if so they sell them there, only 2 dollars and something for a tub of them :D

Oh wow...Texas doesn't have a Trader Joes at all! Sorry FM....well a local market of mine also carries them in the gourmet cheese section, I'm sure SOMEONE near you must carry them!

:) I just bought large bunch of fresh basil yesterday (I miss my plant in the Winter!!) I've been craving fresh pesto this last week! But when I arrived home I then realized I was out of olive oil...:pat: so it will have to wait a day or so. Even my 3 yr old LOVES fresh pesto! :)
