Beer & Deer Chili

2 teaspoons Olive oil
2 med. Onions, chopped
6 cloves of Garlic (minced)
1lb (min) ground Deer/Moose/Elk
3/4 lb(min) Deer/Moose/Elk steak – cut into small cubes

Cook Onions, Garlic and Meat until brown, then add:

1 can of Guinness Beer
1 cup of strong Coffee
2 6oz cans of Tomato Paste
1 can Beef Broth (I prefer low sodium if possible)
1 14 ½ oz can of Diced Tomatoes

Stir, then add:

1/2 cup Brown Sugar
3 1/2 tablespoons Chili Sauce
1 tablespoon Cumin
1 tablespoon Cocoa
1 teaspoon Oregano
1 teaspoon of Cayenne (add more if you like it hotter)
1 teaspoon Coriander
4 14 oz cans of Brown Beans in tomato sauce
1 can Chili style Kidney & Pinto Beans (Heinz)
4 Jalapeño Peppers chopped small
3 10oz cans of sliced mushrooms (drained)
optional ingredient: 1 can chipotle peppers in adobo sauce

Simmer on low for 1 1/2 hours at least.
