I couldn't get on the site yesterday so I'm posting that picture first. This is a spicy creole chicken and shrimp dish over rice.
Tonight, I made marinated and grilled flank steak, a baked sweet potato with butter and cinnamon sugar, and spinach.

I made chicken/shrimp stir fry over Chinese noodles.
Karen.... My cheeks are quencing....Oh, I just love it when you guys post pictures of your yummy meals. It's so much fun to drool. I love your stir fry, Barb - especially those little corns. They are so much fun to eat and always remind of Tom Hanks in "Big". And LS - I can completely understand eating french fries for dinner. Our Canadian friends here in Mexico long for "poutine" - which is french fries, fresh cheese curds and gravy! Can't get fresh cheese curds here anywhere, so they just pine away for it!
I created a new recipe, which I cobbled together out of several that I looked at online. I didn't want to spend $14 for some imported curry paste, so I made my own, and I used some lovely fresh coconut milk to make Thai Shrimp. I wrote out the recipe as I went, and already posted it. It was absolutely delicious, if I do say so myself.

Thank you MaryThanks Karen and Peeps. We're not sure what's going on yet. He's always had different health issues stemming from his prematurity. In the past 3 weeks to a month though, his pain has picked up and he's having some trouble swallowing. His food gets "caught" in his throat. It can be a little frightening. Thank you both for your thoughts. It means alot.
