Hi everybody! Does anyone know if you can make biscuits out of cornbread mix? Just curious as I'd like to try it but don't know how to go about it :corny:

Thanks!

yes but....

use max 25-30% cornmeal - the rest AP / SR flour - going 100% cornmeal will make corn bread, not corn biscuits.

if you are using buttermilk, pretty much any standard recipe will work.
if not using buttermilk, consider upping the baking powder by 20% or so.

mix? ahhhhh......
I don't do mixes - here's mine

Preheat oven to 450’F

In a bowl mix

450 g AP flour - for cornmeal, 350 g flour + 100 g cornmeal

3 tsp baking powder

½ tsp salt

Cut in 6 tablespoons / 85 grams of cold butter

- a pastry blender is handy for this task, but other methods available.

Add one cup / 235 grams milk, mix quickly with a wooden spoon, drop onto flat ungreased sheet,

bake about 12-15 minutes

Notes:

This is a stiff dough.

I have used whole milk through skim without effect.

If using buttermilk, reduce baking powder by 50%.

Bake / into oven immediately after mixing in the milk; do not mix in advance.
