Mock Zucchini Crab Cakes

Zucchini are coming. Be Prepared!

2 cups coarsely grated zucchini
1 medium onion grated
1 cup seasoned bread crumbs
1 Tbsp. mayonnaise
2 - 3 tsp Old bay seasoning <Cajun for some zip>
1 egg beaten
Salt & Pepper to taste

Drain zucchini and onion in a colander to dispel liquid. Combine all ingredients.
At this point texture can be adjusted, too dry add more egg or a splash of milk, too wet add more crumbs. Mixture should hold together. A rounded 1/3 cup makes a nice size patty. Place in a skillet with a generous coating of olive oil over medium heat and saute about 3 minutes/side or until golden brown.

I don't grow zucchini, but I may try this just for a vehicle to carry my Old Bay seasoning, LOL!

We struggle with tomatoes here on the wet side but zucchini (and all cucurbits) grow like crazy. An old standing joke is do not leave your windows open and unattended during the summer or a neighbor will stuff a zucchini through it.

I bought 12 tomato plants and scattered them all over yard. I just hope that one gets enough sun to give me a few tomatoes. I can grow moss like nobody's business though =)
