Chicken Patties with Honey-Teriyaki Glaze

I threw this together whilst looking for new ways to do chicken. You start with this.

3 Chicken Thighs
1 tbsp Italian seasoning
1 cup bread crumbs
1 egg
1/2 cup scallion

Then you make a sauce of this.
2 parts honey
1 part Teriyaki
1 part red wine vinegar

Take the thighs and bone and skin them. Then cut them into 1/2 inch cubes and run that through your meat grinder.

You have ground chicken to which you add the Italian Seasoning, well beaten egg, chopped scallions, and bread crumbs. Mix by hand and form 3-4 patties and set aside.

Preheat oven to 350. On stove top brown each patty about 2-3 minutes per side to get a nice crust. On last flip, place skillet and patties in oven. Let cook 6 minutes.

As patties are cooking, mix vinegar, teriyaki, and honey in a small pan. Heat to boiling and reduce by 1/4. Spoon reduced mixture over chicken patties and cook 5 minutes more to set sauce.

Serve with asparagus or broccoli and fried rice. This is an incredible way to make chicken new again. So yummy.
