Chipotle Mayo

1 cup of mayonnaise
1/2 - 1 chipotle in adobo sauce (I buy the 7 oz cans place the remainder in a jelly jar and they keep in the refrigerator for several months)
juice of 1 lime
add some adobo for color

Buzz in a blender or food processor.

I've made similar Mike........I'll have to add the lime juice next time. Sounds good.

Although I don't know about "Buzz" in a blender........would he even fit??? :mrgreen:

This recipe sounds great!

But I have dried chipotles. They'd be okay to use for this if I rehydrated them?

I like to puree the chipotles, then strain through a fine mesh to get seeds and skin out. Then I take the leftover pulp in the strainer, put it into a jar, fill with canola oil. Let it sit in the fridge, it is wonderful over refried beans, or to use as an oil when sauteing the rice and veggies for a Mexican/Spanish rice.
I use the strained pulp to add to mayo.
