Fresh Tomato & Strawberry Salsa

Poker night, tonight, got cancelled because a couple of the guys flew down to New Orleans area yesterday to volunteer with the Red Cross in case more help was needed. My hat's off to those guys for their offer and thankfully it ended up not being needed. Fortunately, things apparently aren't as bad as they might have been down there!

About this salsa (my contribution to the cancelled poker night feast - the tart sweetness of strawberries complements tomatoes in an unexpected way. A little heat from the jalapenos pulls the mix together.

1 pint fresh strawberries, diced
1 pint ripe cherry or grape tomatoes, diced
1/2 cup diced red onion
1 small or medium jalapeno pepper, seeded and minced
1 small garlic clove, minced
1/2 cup loosely packed cilantro leaves, roughly chipped
1/4 cup freshly squeezed lime juice
2 tbls. honey
1/2 tsp. kosher or sea salt

In a medium bowl, stir ingredients together. Serve with tortilla chips or toasted pita, or as an accompaniment to grilled fish, chicken or pork. Be careful with the jalapeno pepper, or this stuff can take your breath away - and both lungs! But this salsa sure is good!
