This recipe was one of my Mum's favourite Sunday morning breakfast specials - I'll bet Miniman will identify it!


4 pieces of crisply cooked bacon - drained on paper towels
1 pound of link sausages cut into 1/2" pieces
2 cups flour
2 tsp. baking powder
3 cups milk
6 eggs
2 tsp. salt


Set aside two tbls. of bacon drippings; crumble the bacon and set aside. Brown the sausage and drain and set aside. Mix together the flour, baking powder and salt. Beat together with the milk and eggs until smooth. Spread bacon drippings in baking dish; place sausage on top of drippings and top with bacon. Pour in the batter mixture and bake at 400 degrees for 30 to 35 minutes. Serve with lots of nice hot coffee and Mum used to make big, fluffy popovers to eat with this. Yummy!!

Mum always claimed that she could feed an emerging third-world nation with this recipe but it always managed to feed all five of us in my family and that included going back for seconds.
