this is our (new) local fishmonger. stellar products & service. expensive....

Louie-Louie - they are making a mega-hit in our area.

Oh, my, nice presentation. I don't see char here but occasionally there is farm raised steelhead.

And snails! I've not seen fresh snails since shopping in France.

this guy is good. there's not a "previously frozen" anything in the shop.

for freshness, you can personally check the eyeballs and the gills.....

I asked about steelhead - they're expecting a run - wild fresh never frozen in March. I'm thinking to buy a batch of whole fish (he scales/dresses/fillets) and putting some away in the freezer...

I hate freezing good fish, but steelhead takes a freeze decent and it's essentially impossible to get except in season.

scales? yeah - bought a whole black sea bass today - you halfta' decide....

the stuff is expensive compared to supermarket chum; but it's uber good and way cheaper than running a boat.

I usually scale all fish because I like to eat the skin.
The rock fish get messy scaling, though.

Most places here have fresh processed items ( crab cakes, salmon patties stuffed halibut; a person can grab something for dinner that requires little or no work.

I love red snapper but think the are protected in a lot areas.

Makes me miss the fishmonger's van on market day in West Yorkshire.

We have a place in Paterson, NJ that is similar. Not nearly as nice a presentation, but, the fish is there.

I didn't know that. Red snapper is on a lot of restaurant menus around here.
