Congo Bars

Ingredients:

1-1/2 cups a-p flour
1 tsp. baking powder
1/2 tsp. salt
3/4 cup unsalted butter, melted and cooled
1-1/2 cups light brown sugar
2 eggs
1-1/2 tsp. vanilla
1-1/2 cups unsweetened shredded coconut (toasted if you'd like)
1 cup walnuts (or pecans if you prefer)
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips

Preparation:

Preheat oven to 350F. Spray 9x13 pan and line with parchment.

In a bowl combine flour, baking powder, and salt. Whisk together.

In a large bowl, whisk the melted butter and brown sugar. Add eggs one at a time and the vanilla, whisk thoroughly. Add dry ingredients to liquid and fold them in. Don't overmix. Fold in coconut, chips and nuts.

Put mixture into pan and spread into an even layer. Bake until top is shiny and firm to the touch. Cool on wire rack. Cut into bars.

Shades of my childhood!

When I was little, the mother of one of my friends in the neighborhood made these for us once. I thought I was in heaven!
