Raspberry Delight
(1) 16 Graham Crackers
(1) 1/3 cup melted Butter
(2) 1 Box Lemon Jello
(2) 1 Cup Boiling Water
(2) 4 Teaspoons Lemon Juice
(3) 1 8oz. Pkg cream cheese
(3) 1 cup white sugar
(3) 1 teaspoon vanilla
(4) 5 cups Cool Whip (1 carton)
(5) 1 package “junket Danish Desert” Raspberry – use only junket brand!!! It will be found by the Jello in the store.
(5) 1 cup cold water
(5) 1 package frozen raspberries (2 cups)
1) Lay the 16 crackers whole in the bottom of a pan. Pour the melted butter over the whole crackers. Crush the crackers in place.
2) Dissolve Lemon Jello into boiling water. Then add 4 teaspoons lemon juice (bottled “Realemon” OK)
3) Beat together with mixer until creamy
4) Combine step (2) and (3) when partly congealed. Fold 5 cups cool whip (1 carton). When combined, pour into pan with the crushed graham crackers on the bottom. And put into refrigerator while making topping.
5) Cook all Item 5 ingredients until thick on a stove top pot, stirring constantly. When stirred all together, than put the pot into a pot of cool water, stirring constantly. When cool, spread on top of Step 4 mixture and refrigerate.
