I would have been happier with these if I hadn't seen the photo on their website. http://skinnyhealthyfood.com/squash-patties/

Theirs looked more like pancakes, and mine looked more like ... I don't know, but not pancakes.

I used two small zucchinis, and the flavor was good, but I kinda like the pancake-looking ones.

Maybe if I used half a cup of Bisquick instead of flour???

Served with chicken patties, and extra marinara to dunk the squash patties.

Squash Patties
2 cups yellow squash, finely chopped
1 cup onion, finely chopped
1 egg, beaten
1 teaspoon salt
1 teaspoon pepper
½ cup plus 1 tablespoon all-purpose flour
vegetable oil

DIRECTIONS:

  1. In a large bowl, combine squash, onion, egg, salt and pepper. Mix well. Stir in flour.
  2. In a skillet, heat ½-inch oil over medium-high heat.
  3. Using a tablespoon, drop batter into oil.
  4. Cook about 3 minutes per side or until golden brown, turning once.
  5. Drain patties on paper towels.

Squash holds a lot of moisture anyway.
Whenever I pan fry it, there is a lot of liquid in the pan.
Probably more egg and yes, I'd try Bisquick too.
Couldn't hurt.
They look good.

there's a huge variability in squash moisture - small young ones are best - as they get bigger the seed cavity grows and there's a lot of water 'down the center' - I've found it necessary to add flour 'as needed' to get the right 'batter' consistency. seldom works out as per a recipe.


the water difference gets even more huger when 'shredding' or grating squash....

Really, Peep? Gee, thanks (yes, that was my photo).

I think I will try these again with Bisquick. Maybe try some with my mini eggplants, too.

A month or so ago, while I was still living with my son, granddaughters and the lazy girlfriend, she went bounding into the kitchen one evening cutting up a squash, and threw it in a pan with very little oil, covered it - which essentially steamed it and turned it to mush.
Then wanted me to fix it.
You can't unwind a clock.

I've made it open pan fried in corn oil and it's come out quite nice.
Your squashes may vary.
