Irish Bambrach Bread

1 cup cold tea
1 cup brown sugar
1# of dried & chopped fruit <apricots,apples, cherries, cranberries, dates your combination> NOT candied fruit!
Combine and soak overnight.

Next day preheat oven to 350. Add to fruit and mix:
2 cups flour
2 tsp. baking powder
1 egg slightly beaten

Pour into a buttered loaf pan and bake 1 1/2 hours or until done.

Empire State Muffins

These muffins are really packed with lots of good stuff.I am not sure where I got this recipe
(probably either the newspaper or my mother). They are very versitle can add or substitute alot of
ingredients.
2 cups shredded unpeeled apples
1 1/3 cups sugar
1 cup chopped cranberries or any dried fruit or raisins or blueberries
1 cup shredded carrots
1 cup chopped nuts
2 1/2 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
2 eggs, lightly beaten​
1/2 cup vegetable oil

In a large bowl combine apples and sugar.
Gently fold in cranberries, carrots and nuts.
Combine dry ingredients and add to bowl.
Mix well to moisten dry ingredients.
Combine eggs and oil and stir into apple mixture.
Fill 18 greased muffin tins 2/3 full.
Bake at 375 for 20- 25 minutes.​
Cool 5 minutes before removing from tins.

Rosemary Biscuits

Rosemary Biscuits

1 cup whole wheat flour
1 cup unbleached all purpose flour
1 TB snipped fresh rosemary or 1 tsp dried crushed rosemary
2 tsp surgar
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/4 cup unsalted butter
3/4 cup milk

Lightly grease cookkie sheet, set aside. In a medium bowl stir together the flours, rosemary, sugar, baking poder, baking soda
and salt. Using a pastry blender, cut in the butter until mixture resembles coarse crumbs. Make a well in the center of flour mixture.
Add the milk all at once. Using a fork, stir the mixture until just moistened.
Turn dough out onto a lightly floured surface. Quickly knead the dough by gently foldling and pressing 10-12 strokes or until nearly smooth.
Pat or lightly roll dough into an 8 inch square. Cut the dough into 12 biscuits.
Place biscuits close together on prepared baking sheet. Bake in 400 degree oven for 16-18 mins or until golden. Remove biscuits from baking
sheet and serve hot, or transfer and cool on wire rack.

Harris Ranch Buttermilk Biscuits

A reader asked the L.A. Times food section for the recipe for the buttermilk biscuits served at the Harris Ranch Restaurant (Harris Ranch is one of the better-known beef producers in California). The Times was able to get the recipe and included it in today's (3/18/09) food section. They look and sound good!

Yeast does not hate you! You just need a bit of practise that is all. There are yeast thermometers, too, so that you can be assured that you don't kill them.

Hush Puppies

Hush Puppies
Makes about 12
1 Egg, lightly beaten
1 cup Milk
2 Tablespoons Green onions, minced
1 cup Cornmeal, white
1/2 cup Flour
3/4 teaspoon Baking powder
1/4 teaspoon Baking soda
1/4 teaspoon Salt
Oil for deep-frying
Heat the oil to 375. Mix together the egg, milk, and green
onion. In a separate bowl, blend together the cornmeal,
flour, baking powder, baking soda, and salt. Stir the dry
mixture into the egg mixture. Drop spoonfuls (about 1 1/2
Tablespoons each) into the hot oil. Cook for about 3
minutes (or until brown). Drain on paper towels. Serve​
warm.

Cornmeal Flatbreads

2 cups warm water
1 packet active dry yeast
4 1/2 to 5 cups unbleached flour, plus more for kneading
1/3 cup finely ground yellow cornmeal
1 tablespoon table salt
20 or so Kalamata olives, pitted and halved or quartered (optional)
4 tablespoons extra-virgin olive oil
1 tomato, cored and thinly sliced vertically
1/2 red onion, very thinly sliced
1/2 teaspoon coarse salt
Freshly ground pepper to taste
Leaves from 5 to 6 small sprigs rosemary
1/4 cup shaved fresh Parmesan

1. Measure the water into a large mixing bowl. Sprinkle the yeast over the water and stir it with a wooden spoon. Let the mixture stand until the yeast dissolves and small bubbles form, about 5 to 7 minutes.

2. Add 4 cups of the flour, the cornmeal, and the table salt and stir the mixture until the ingredients are uniformly combined. Stir in the olives, if you're using them. Add another 1/2 to 1 cup of flour and knead the dough in the bowl until it holds together.

3. Turn the dough out onto a floured surface and knead it until smooth and elastic, 5 to 7 minutes. Shape the dough into a ball.

4. Measure 1 tablespoon of the olive oil into a large bowl. Add the dough, then turn it to coat all sides. Cover the bowl with plastic wrap and let the dough rise in a warm area until it has doubled, generally 1 to 1-1/2 hours.

5. Heat the oven to 475°F. Coat a rimmed baking sheet (ours was 17 by 12 inches) with 1 tablespoon of the olive oil. Punch down the dough and transfer it to the prepared sheet, using your fingertips to press it out to fit the pan.

6. Drizzle the remaining 2 tablespoons of oil over the dough. Again, let the dough rise in a warm area, uncovered this time, until it's puffy, about 30 minutes.

7. Press your fingertips into the dough to form small indentations across the entire surface. Then top it with the sliced tomatoes and red onion, and season it with the coarse salt and freshly ground pepper. Distribute the rosemary leaves across the surface, lightly pressing them into the dough.

8. Bake the bread until it's brown and crusty, 20 to 25 minutes, then top it with Parmesan. Enjoy it warm or at room temperature. Serves 8 to 10.

Cherry Pecan Muffins

1 large egg, beaten.
3 ½ cups of unbleached flour.
2 cups of milk.
¾ cup of tart cherries, drained.
1/3 cup of vegetable oil.
1/3 cup of chopped pecans.
¼ cup of sugar.
1 tablespoon of baking powder, and 1 teaspoon of baking powder.
2 teaspoons of almond extract.
1 teaspoon of salt.

Instructions

In a suitably sized mixing bowl, combine the flour, baking powder, salt and the sugar.

In another bowl, combine the beaten egg, milk, almond extract, and vegetable oil; blending thoroughly.

Mix the ingredients together gently.

Gently fold in the drained cherries and chopped nuts.

Spoon the batter into greased muffin tins filling each about two-thirds full.

The one and only time I made cherry muffins Bud, I used a jarred/canned cherry that my friend Joyce gave me.

I was thinking using a maraschino might lose something in the baking process.

Then again, I could be wrong.

I guess what I am saying is this.
Put a maraschino in your mouth and taste it.
Try a canned tart cherry that has been put back fresh off the tree.

Perhaps a maraschino might work better, but that's not what I used... but I might next time! :)

Golden Butter Banana Bread

Making Banana bread cant get any simpler than this. If you really want to keep it simple, omit the topping. Its just as good plain.

GOLDEN BUTTER BANANA BREAD

1 box(es) PILLSBURY GOLDEN BUTTER CAKE MIX
1/3 cup(s) OIL
1 cup(s) BANANAS; Mashed.
2 EGGS
1/2 cup(s) MILK
1/2 cup(s) WALNUTS; Chopped.
TOPPING
1/3 cup(s) BROWN SUGAR
1/3 cup(s) COCONUT
2 tablespoon(s) BUTTER; Softened.
1 1/2 teaspoon(s) MILK
2 tablespoon(s) WALNUTS; Chopped.

Add cake mix, eggs, oil and milk to a large mixing bowl.
Blend together on low speed.
Add in mashed bananas and chopped walnuts.
Pour into a greased loaf pan.
Bake at 350 degrees for 1 hour.
In a bowl, add topping ingredients.
Using your fingers or a fork to mix until well combined.
When bread is done remove from oven and spread topping over hot bread.
Place bread back in the oven for 3 minutes to cook topping.
Remove bread from oven and with a spoon spread topping to edges of bread.
Cool 20 minute; then remove bread to a rack to cool.
Topping will harden as it cools.
