This is quick and very easy if you don't want to fire up the grill.

Pressure-Cooker BBQ Chicken

1. In the pan of a 5- to 7-quart pressure cooker over medium-high heat, saute one chopped onion and 2 minced or crushed cloves of garlic in 1 tablespoon of oil for about 2 minutes, just until softened.

2. Add ½ cup of your favorite BBQ sauce (I like Sweet Baby Ray's) and ½ cup of water to the pan and stir to combine.

3. Lay one chicken cut into quarters on top of the sauce in the pan, meaty side up; chicken can be skinned if desired.

4. Lock cover of pressure cooker in place, turn heat to high, and bring to high pressure; reduce heat to maintain high pressure and cook for 10 minutes.

5. Reduce pressure using quick-release method.

6. Put chicken on a broiler rack, meaty side down.

7. Cook sauce in pan until reduced and thickened.

8. Brush chicken with thickened sauce from pan and place under broiler about 3 to 5 minutes, until glazed and beginning to brown.

9. Turn chicken over, brush again with sauce, and broil until glazed and starting to brown on that side.

10. Serve immediately with additional sauce from pan.
