Lemon Raspberry Cheesecake Bars

This is a nice refreshing dessert, especially after a BBQ - Hope you enjoy!

3/4 c of butter or butter flavored shortening
1/2 c firmly packed brown sugar
1 1/4 c PLUS 2 Tbsp of all purpose flour (divided)
1 c uncooked oats
1/4 tsp salt
3/4 c of Seedless Raspberry Jam
2 - 8oz packages of cream cheese @ room temperature
3/4 c granulated sugar
2 eggs (room temperature)
3 Tbsp lemon juice
2 tsp. lemon zest

Pre heat oven to 350 and use a non-stick spray to cover a 9x13 baking dish.

Beat together the butter/shortening and brown sugar until fluffy. Add 1 1/4 c of flour, oats and salt until well blended. Press in to the greased baking dish and bake for 20 min. or until lightly browned. Let crust cool for about 2-3 minutes and spread the raspberry jam onto the crust.
Beat together cream cheese and granulated sugar with the remaining 2 Tbsp of flour. Add eggs and blend. Then add the lemon juice and zest. Beat until smooth. Pour over raspberry layer.

Bake for 25 min or until set. Cool on a wire rack then store in refrigerator.
