Mom's Meatloaf

Here's my Mom's meatloaf recipe that everyone wants the recipe. Try it-

Pap

Jane’s Meatloaf
2 lbs lean ground meat (beef or wild game)
1 large onion chopped
2 eggs
4 generous shakes of Worchester sauce
4 generous shakes of Lowry’s seasoned garlic salt
1 large Idaho russet potato grated
1 capful liquid smoke (optional)
1-1/2 cups corn flakes or Total cereal
¼ cup milk to moisten if needed

Mix all ingredients WELL and form into loaf. Cover with catsup and garnish with green pepper rings. Bake at 375 for 1-1/2 hours. Serve with a heated can of UNDILUTED tomato soup with 1 teaspoon Worchester sauce and pour over sliced meat loaf. Makes great next day sandwiches if there’s any left over.

I basically made Jane's meatloaf last night except this was called Down on the Farm Meatloaf, a Mennonite recipe and it was excellent. I used two pounds of burger and adjusted ingredients for the extra half pound of burger. This recipe called for shredded carrots instead of potato. For the binder I used oatmeal and it did a good job. I never did get a picture.

2 eggs
1/2 cup milk

3 slices brown bread crumbled

1/2 cup finely chopped onion
1/2 cup finely shredded raw carrot

2 teaspoons Worcestershire sauce
2 teaspoons salt

1 teaspoon pepper

1 1/2 pounds lean ground beef

3 tablespoons brown sugar

1 tablespoon dry mustard

1/4 cup ketchup

Instructions

In a large bowl, beat eggs, add milk, bread, onion, carrots, Worcestershire sauce and salt and pepper. Mix well until bread is mostly incorporated.

Add ground beef and mix well, making sure all ingredients are evenly distributed.

Pack into a glass or metal loaf pan or pan of your choice.

That sounds really good, John.
As you know I love Amish and Mennonite cooking.
I had a killer meatloaf in Shipshewana, Indiana that blew my mind.
At the "blue" restaurant, as my boys used to call it.

FATHER'S MEAT LOAF

2 pounds hamburger
2 eggs, slightly beaten
2 cups bread crumbs
1 cup chopped onion
½ cup chopped green pepper
¼ cup milk
2 tablespoons horseradish
2 teaspoons salt
1/8 teaspoon pepper
1 teaspoon dry mustard
¼ cup catsup

Mix all ingredients except catsup. Shape into loaf and brush catsup over the top. Bake at 350° for one hour, spooning juices over top before serving. Serves eight.

What I made yesterday. I opted to put bacon on the top rather than ketchup.

I was reading your "Down on the Farm Meatloaf" recipe you posted long ago. Do you remember what "brown bread" means? I always think of Boston Brown Bread in a can when I see that. Boy, that would be an unusual ingredient in a meatloaf! I might try it!

I’m making Father’s Meatloaf for tonight. I’ll use panko for the breading and leave out the green pepper.

The brown bread is excellent and see that WinCo carries it now.

My mother used to buy that brown bread in a van all the time in the 1950s and 60s. I didn’t know they still made it. It was very sweet, like a muffin in a can.
