Grilled Sticky Apricot Spatchcock Chicken

this is one of my favorite ways to cook a chicken now.. a big thank you to Keltin for the inspiration.

i brined/marinated and injected my chicken the night before in:
3 cups of peach juice
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon pickling salt
and top the chicken after i injected it with:
2 tablespoon of homemade salt free steak spice
fresh cracked black pepper.

split,rubbed with more steak spice and ready for the grill

on the grill just about ready to come off and sauce with apricot bbq sauce

off the grill and ready to eat - it got a little dark on the edges because of the high sugar content. this is one of the best chickens i have ever eaten. i would recommend doing this. again a big thanks to Keltin.

and poutine for a side dish (one more day of really bad eating because mrs bams diet starts on monday..lol)

its a canadian thing... thick rich heavy strong gravy and cheese

and dont knock it until you try it..lmao

Hey, I don't see anything wrong with gravy on fries. I've had chili and cheese, mustard, may, honey mustard, blue cheese.........:lol:

I thought poutine used cheese curds, different from just regular cheese and not found everywhere...
And I thought it was a WI thing. I didn't know Canada, also.

yes the traditional poutine is made with cheese curds. cheese curds are found almost everywhere - any state that makes processed cheese makes the curds( i use to make cheese.lol),those curds get pressed into big blocks for further processing. nothing like a nice squeeky cheese curd.:)
