Queso fundido

One of the foods we ate for the first time on our recent trip was queso fundido, which is basically melted cheese mixed with chorizo, mushrooms or sliced roasted poblanos and served with hot tortillas. Mmmmmmmm! What's not to like?

There is an excellent Mexican chain in my area, where I've met former work-mates and we've ordered this. It's terrific!

This is one of my favorite things to order, Karen. Definitely with hot chorizo. It's so good, especially when sitting outside on the patio on a chilly evening. I can picture you and your hubby sitting on your fabulous, private patio eating this and sipping margaritas.

This sounds very good. So basically you make it and then pile it up on a tortilla, wrap it up, and eat it?

It was served with a big spoon, and you just glop it on the tortilla, roll it up and gobble it.
